Double Chocolate Espresso Cookies

These cookies are devine! While I was looking up a recipe from the food network I stumbled upon these, and loved them from the get-go!

These yummies were the perfect treat for giving to the family members who decorated for Christmas today (yes, I know.. another year where I skipped out on digging up all the boxes-sorry)

Hopefully my cookies made up for my lack of effort!

Double Chocolate Espresso Cookies: From Giada de laurentiis

-6 ounces of Semi Sweet chocolate (I used chips)

-2 tablespoons of butter

-one tablespoon instant espresso powder (I used Decaf)

-One cup Flour

-2 tablespoons Cocoa powder

-one teaspoon Baking powder

-3/4 cup Sugar

-pinch of salt

-2 eggs

-2 tablespoons water

-1 teaspoon Vanilla extract (homemade recipe to be posted soon!)

-one cup Chocolate Chips

Preheat oven to 300 Degrees, mix all ingredients in a bowl. Scoop spoonful (about 12) onto baking sheets lined with parchment paper, bake for 20 minutes or until they begin to crackle. Allow to cool on the cookie sheet and then enjoy! These make really large cookies, the perfect size for giving or sharing!
