Giada’s Creamy Mashed Potatoes with Kale

Last night, on the food network I watched Giada’s christmas special, and she made a wonderful, classy take on a simple classic: Mashed Potatoes.

This morning I woke up feeling the need for some greens, and this simply did the trick.

I adapted her recipe a little for the ingeridents, replacing cheeses, and other things, and added baby kale instead of the full size kale. The baby kale was nice, as the pieces were the perfect size and not stringy after cooking.

 

Creamy Mashed Potatoes with Kale: (Adapted from Giada De laurentiis)

-7 medium Russet Potatoes

-couple garlic cloves

In a pressure cooker, steam the potatoes, for 20 minutes (only 7 of the minutes after the after the lever is up)

 

-one bunch of baby kale (buy this Organic!)

-olive oil

-one onion

-one clove garlic

-salt and pepper

-1/2cup water

Durring this time, dice the onion, and add the a pan on medium heat with the olive oil. once the onion turns translucent, add the baby kale and the water, along with the whole garlic clove. Cook for 12 minutes or so, until the kale has reduced by sized and is cooked. season with salt and pepper

 

-1/2 cup Sour cream

-1/2 cup Parmesiano Regiano

-salt and pepper

Mash the potatoes (by hand is best) and add the kale and onion mixture, then add the sour cream, the Parmesan, and season.

Enjoy while hot, and place in a warm 300 degree oven if needed to keep hot until serving!
