Lime and Basil Ginger Quinoa & Toasted Cheedar Baguette

A yummy treat!

For this I had to run out in the rain durring a storm to grab some basil leaves. Oh, the things I do for basil.

Lime and Basil Ginger Quinoa

Ingredients:

-One lime (zest and all)

-A bunch of Basil

-A handfull Parsley leaves

-Salt& Pep!

-1/2 cup Quinoa (per two people)

-one piece of Ginger

Cook your Quinoa, and add the peeled piece of ginger to the cooking water. Then using a high speed blender, or a food processor, blend the lime and the Basil, Parsley and add salt and pepper. Mix and enjoy hot or cold!

 

Toasted Cheedar Baguette:

– Two pieces Baguette

-Graded Cheedar cheese (Farm to market)

Broil the baguette with the cheese a-top for about two minutes, watch carefully! Should be ready when the cheese is bubbly and the bread is browned on the sides.

A lovely love sandwich

Here in my couple, we call a love sandwich a:  quick, healthy, gourmet and super tasty sandwich made by either one of us!

Last week I caught a cold, which left me home to sleep for 18 hours..

Luckily for me, I have the most incredible partner in the whole planet, who made me one of the best Love Sandwiches yet!

Recipe for this version of the love sandwich:

Makes two love sandwiches

-4 pieces of whole grain, Two sesame crusted bread.

-Farm to market Sharp Cheedar

-Hummus (spread on one of the slices)

-Veganaise (spead on the other slice)

-One tomato sliced largely

-Baby spinach (try and pick organic for the spinach, as it is a leafy green and susceptible to a larger pesticide contamination)

Yummy, Make these lovely treats, eat and enjoy an episode or two of your favorite TV show!

Cookie monster cupcakes for 2, 4, or 24!

Cookie Monster Cupcakes for 2, 4, or 29..

I made these lovely cupcakes for my sweeties little brother, and his little cousin. These are so much fun and a great gift for little ones who love Sesame Street! I sure wish I could have these for my next birthday.. and I may!!

Ingredients

Makes four cupcakes: Times the recipe as much as you want!

-One Egg
-4 Tablespoons Sugar
-2 tablespoons Extra Virgin Olive Oil or Sunflower oil.
-One teaspoon Vanilla Bean extract
-half of a cup All Purpose Flour
-3 Tablespoons Organic Milk
-Pinch of salt
Mix all together with a hand whisk,  Heat over to 350, and cook for 15 minutes!
Decorating like Sesame Street:
(for four cupcakes)
-Four Marshmallows (try finding Vegan mellows)
-Black writing bakers paste
-4 “chips Ahoy” type cookies  (Mini sized are good for this too!)
-Homemade Icing with a bit of  Natural Blue food coloring
-Homemade Blue sprinkles.
If you are still buying your own Sprinkles, you will love this idea. I make my own sprinkles. Using a single drop of food coloring in a zip-lock bag, I add the desired amount of sugar, and shake! These are perfect, and look like the fine sprinkles, a fun way to make your own, and know just what is in those sprinkles too!

French Nougatine

Nougatine, is a wonderful delicacy  you can find topping the most beautiful wedding cakes of Paris and it’s surrounding. The ingredents are simple as can be, but like with any other caramel- it’s the making that is trickey. With a little time, and a watched eye, your nougatine can be perfect too!

Here are a few tips:

-Start with a warm pan.

-constantly stir

-keep the browning to a constant, it should be even

-DO NOT TOUCH, or let bubble on you.. It will burn your skin terribly.

-keep all children away from the stove top, and keep your attention focussed solely on the Caramel

-If it clumps turn the heat down and stir- be patient it will get back to liquid.

-Do not be dissapointed if it doesn’t work on the first try, these recipes need practice!

 

Ingredients:

-One cup sugar

-Chopped nuts to stir in a the end (optional)

 

Heat a pan, and drop the sugar. Stir constantly, when the sugar becomes liquid and starts to brown, watch for the color that my caramel is in the pictures above, when it reached this color, take off heat, and while stiring; mix in the nuts. ( I used almond) or skip this step. on a greased baking sheet lay the Nougatine and let cool, try to lay the caramel thin and evenly on the sheet. once dry, break off a piece and enjoy, it should be almost too tough to break, this is perfect!

Every one can feel like a famous Patissier (sweets baker) and with the ingredients being one cup of sugar, you have no excuse not too try until you get it right!

 

 

 

Chocolate Zucchini Bundt Cake & Sesame Crunch Homemade Protein bars

Chocolate Zucchini Bundt Cake:

I stumbled upon this recipe just the other day, called almost guilt-free, and realized there was no reason I couldn’t turn “almost guilt free” to completly healthy: as healthy as dinner.

Cake for dinner.. I’ll take on the challenge!

-Two cups whole wheat flour.

-1/2 Cup Raw Cacao Powder

-1 teaspoon baking powder, and 1 teaspoon baking soda

-1/2 teaspoon Sea Salt

-1 cup Agave Nectar

-2 Cups fresh Apple Sauce

-1 cup Almond or Soy Milk

-1 teaspoon Vanilla Bean extract

-2 small Vitamix-ed (or shreeded as fine as possible) Zucchinis

Heat the oven to 350 and bake for 45!
