Lunch boxes and waiting for the Vitamix..


Waiting for my love: Ida-the-vita to get here, I have found myself having to make my own lunch without the Vitamix. So, while I patiently wait, I will try to construct healthy lunches that are cool, and healthy, and that I can just eat in the middle of class ( I get hungry before lunch! )

Lunch Box of today:

-Organic Crofters Pomegranate Jam, and all natural Earth Balance Peanut Butter (PB & J)

-Fresh Fruit salad: Organic Banana, Nectarine (USA)

-Homemade Nut trail mix, Hemp granola, Dried fruit

-New Zealand , Grass Fed: Sharp Cheddar

-Acai berry juice+ Orange juice, Carrot Juice, Apple juice, POM juice, Celery juice


This year i bought a few new reusable containers to complement the ones I had, I started the year off with a new Hot & Cold Thermos food jar, and a new Hot & Cold BPA free canteen, as well as a BPA free On The Go Salad Maker with Dressing and Ice Pack compartment, Two new BPA free  “Princess” snack boxes, and my old wonderful BPA free Sandwich box.

Try buying reusable containers, It’s a great way of ridding your self of unnecessary plastic trash, as well as making sure all your lunches are in BPA free containers.

Some BPA free containers are more expensive than others, but don’t be fouled their all fine, I got my princess ones at Target for 1$ versus 5$ for a same one without the princess design, for the 8$ I saved between the two: I don’t mind the princess!


Sun Dried Tomato and Sunflower crackers

These were so yummy, I brought some over to family too, while they were having a tough day with some homemade hummus to cheer them up!

Sun Dried Tomato and Sunflower crackers:

– Flax seeds ( grinned into meal)

-Sunflower seeds (chopped roughly)

-Sun Dried Tomatoes

-Garbanzo bean flour

-Basil, Thyme, Rosemary, and Parsley (fresh)

-Salt, Pepper


unfortunately, making up recipes as great as it is has it’s problems too.. These lovely babies were an invention which the recipe will remain unknown untill I try to recreate them. I forgot to write it down, and I now have NO CLUE, what the measurements would be!

Lots of strawberries.. all cut up, ready to be… you guessed it; made into Jam!

How yummy! And this is the perfect time, when you can get great strawberries from the Farmers Market!!

Young Zucchini Bateaux

Here’s a wonderful recipe I adapted yesterday from the Food Network. I followed the basic idea of the recipe after watching the show and adapted with the ingredients I had, and made it into a vegan friendly dish… Although I added cheese after, So it’s optional 🙂

Young Zucchini Bateaux:

-2 young/small Zucchinis

-Olive Oil

-One yellow Onion

-One Garlic clove

-One Roma/Vine Tomato

-One piece of bread ( I used sprouted grains bread)

-One bunch of Parsley (Flat leaf)

-Taragon, Basil, or herb you like

– On top, I added… (Shredded Cave Aged Parmigiano-Regiano)

The Sun Dried Tomatoes me and my grandma made from the garden this summer, were wonderful. I thought I’d share a list and some pictures of all the times I used them and how yummy they looked and were each time! I hope you get inspired and use some of these recipes for your own tomatoes!

Ways to use Sun Dried Tomatoes:

– Goats cheese and Sun Dried Tomato Pizza

– 3 vegetable Tian

-Zucchini Boats with Sun Dried Tomatoes and Goats cheese


-Love Sandwiches (Sandwiches me and Ryan make after school, or before work)

Double Vegetable Tian: Pomme de Terre & Courgette

This recipe is great, easy and we eat it a lot at our house!! Please adapt this, add more vegies, less, add color with spice, cheese, what ever you feel like adding today: That sure is what I do with this!!

Double Vegetable Tian:

-One Zucchini

-two Potatoes

-Olive oil

-One onion

-Cayenne pepper ( the add of today!)

-salt and pepper

Saute the Onion, and when caramel and sweet.. add to the bottom of your baking dish, arrange thin slices of the vegetables: BE CREATIVE about this part! It should look like art!! sprinkle with your spices, cheese, and salt and pepper, toss some olive oil on top, and bake at 375 for 45 minutes!!

Lemon Rosemary Madeleine

These Lemon and Rosemary Madeleines were delightful the other morning for breakfast with Ryan. This was a nice fluffy and sweet reminder of our summer in France. He took most of these photographs, and I think they look great photographed.. not that these little babies weren’t super photogenic with there adorable shape, lovely aroma, light lemony color, and their pieces of rosemary.. How yum!

Lemon Rosemary Madeleine:

  • 1/2 cup unsalted butter, melted and cooled
  • 1 1/2 cups cake flour
  • 1/2 teaspoon baking powder
  • Dash of salt
  • 1/2 teaspoon chopped fresh rosemary
  • 3 whole eggs + 2 egg yolks
  • 3/4 cup granulated sugar
  • 3/4 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • zest of one lemon
  •  juice of one lemon
  • powdered sugar (optional)

Today, me and my sweetie went to this wonderful coffee shop on WornalRd, called One More Cup. I had the vegan smoothie, and he the Toddy!

We also posted a flyer for the site!

Then, we topped a great afternoon with a trip to whole foods, from which we purchased:

-Two Raw Kombucha drinks, Mango & Cranberry

-Heirloom tomatoes (aka: Whole paycheck tomatoes!)

-Hemp granola


-Hezelnut half&Half

-Sunny bears! 

-Vegan jelly beans

-Vegetable Elbow pasta

-Mango limonade

-Herve monts camembert

-Aussie Cheddar ( a new fave!)

Indian Peach Lassi


A Lassi, is a smoothie type drink using yogurt instead of milk or ice. Because of my grandma’s grand garden, we have these wonderful peaches! And this was just the perfect recipe for some of them!

Peach, Mint and Lime Lassi

This is a two part recipe: I  first make the Mint and lime cubes, and then create the Lassi!

But  here is a much simpler way:

-two peaches (ripe)

-Sprig of mint

-1 tablespoon lime juice

-one cup Greek yogurt

-three ice cubes

Blend and serve chilled!

Homemade: Peanut Butter and Sunflower seed butter

Today I made myself a wonderful Jar-full-of Peanut butter sweetened with Agave Nectar! Yum. I also made some magical Sunflower seed butter, sweetened with Honey.

Peanut Butter

-1 cup dry roasted Peanuts

-2 tablespoons Canola oil

-1 tablespoon Agave nectar

Mix all in a food processor, until the peanuts turn creamy and no longer grainy.

Sunflower Seed Butter

-1 cup sunflower seeds

-2 tablespoons Canola oil

-1  1/2 tablespoon Honey

Mix all in a food processor, the butter should turn a creamy light gray.

You may adapt this recipe to any nuts.  Almonds and Cashews are also known for their great butters!
